Flat bottom

When it comes to pour-over filter brewing there are three standards:

  • triangles,
  • cones or
  • flat.

Each has its own recognised standard.

For the flat-bottom brewer, the Kalita Wave is the industry’s go-to. The three small holes are separated by ridges that promote a drainage rate that Kalita feels best suits most coffees.

What we like

The Kalita Wave coffee brewer is available in other choices but the stainless steel is the classic. The 155 is ideal for the traveller, and the 185 is perfect for the home brewer. By using the stainless steel option the brewer is strong and reliable.

The design creates a balanced extraction for most coffees and is especially suitable for specialty coffee.

Not so keen on

Wave filters are difficult to wet without changing the shape, you need a good pouring kettle to do so. Although Kalita recommends not pre-wetting, we feel it is necessary to get rid of the slight paper taste. The dripper is also on the expensive side.

How to use a Kalita Wave?

Remember the waves help keep the filter from sticking to the brewer and allow for even extraction of the coffee grounds. To calculate the amount of coffee required and the water recommended use our coffee brewing calculator. This will use our recommended starting brew ratios.

Our standard method of using the Kalita:

  1. Place the paper filter in the wave, and place it on the coffee scale.
  2. Gently rinse the wave filter with hot water and carefully discard the rinse water.
  3. Use a medium-fine ground coffee and add your desired amount in to the filter.
  4. Gently shake the ground coffee it to level the bed.
  5. In the scale start the timer and pour enough water to wet all the grounds, about twice the weight of the coffee (less for more body, more for more clarity, 2x is a good target).
  6. Allow the resulting wet coffee to bloom. This helps release any carbon dioxide and enhances the flavour of the coffee.
  7. After 30-45 seconds, slowly pour more water in a circular, spiral or combination motion. Keep the water level below the top of the filter. Avoid pouring on the filter edges or directly on the holes. When pouring try make the stream of water solid, but not too aggressive. Being more aggressive will mean you need to do multiple pours.
  8. If you reach the top of the filter repeat this process until you reach your desired brew ratio, usually between 15:1 and 17:1 of water to coffee. The total brew time should be around 3 to 4 minutes.
  9. Carefully remove the filter and enjoy your coffee!

You can adjust the grind size, water temperature, and pour speed to fine-tune your brew according to your taste preferences.

20 Waves

The feature of the Wave Series 185 (155) is that the contact surface between the filter and the inner dripper with 20 waves is on the side, and is not in contact with the flat bottom. Due to the limited contact surfaces, hot water does not accumulate when poured in the long-term at an angle but rather quickly drips to the Wave Zone.

Wave Zone

Even if the hot water is poured in at an angle, the bottom is flat, so the grounds are easily made uniform and coffee can be simply made without loss in taste.

Kalita Style Three Holes

Hot water does not accumulate when poured in the long-term, but rather quickly drips to the Wave Zone. Therefore, only deliciousness is dripped before the bitterness comes out.
